Key Lime Cupcakes!

For a while now whenever we get a real sweets craving we have been going to GiGi's Cupcakes! They are amazing! BUT expensive. I decided for the price of one cupcake I could make 24 for the BBQ at my sister's house last Saturday night! Jeb has been saying he wanted a Key Lime cupcake so I've been looking at recipes on Pinterest and Online (thanks to google). I kinda mashed a few together to get the easiest combo.

Cupcakes Ingredients:

• Lemon Supreme Cake Mix
• I box Lime Jello
• 1/3 cup Lime Juice
• 3 Eggs
• 1/3 cup Cooking Oil
• 3/4 cup Water
•  1-2 drops Green food coloring (this is if you want them REALLY green, i added a few drops)

Icing Ingredients:

*You can certainly use store bought icing I just wanted to make my own! :)

• 3 1/2 cups powdered sugar
• 1/4 cup melted butter
• 8 oz Cream Cheese
• 1 teaspoon Vanilla Extract

FIRST, Set oven to 350°F!

In large bowl, mix cake ingredients. (I use a whisk because I think it makes the batter more fluffy but of course you could use your hand mixer.) Place cupcake liners in pan! Then evenly divide batter! Bake 20-25 minutes. When cupcakes are done, poke holes in the tops with a wooden skewer or tooth pick. This lets the icing oozes down into them! :)

THEN, For Icing -Use large bowl to beat cream cheese and butter on medium speed until light and fluffy. On lower speed setting beat in vanilla extract and 3 1/2 cups powdered sugar until mixed. Raise setting to beat on medium speed until fluffy. 

* If you'd like the icing to be more firm you can place in fridge for a bit, too. I like my icing to be more of a glaze. 

I only ate two, although i wanted to eat ALL of them. 

They turned out SOOO yummy. Everyone at the BBQ loved them! :)

ON another note, we also got a puppy this past weekend! Ms Betty is just a wonderful dog! She's such a sweet dog that I feel VERY happy we found! I believe if you want a dog, adopting is the way to go! There are so many dogs in need of a home!
